BBQ or no BBQ, fetch all of the fresh ingredients and find a way to make these fantastic chicken skewers for the family.


  • 1 bird's eye chilli

  • 1 knob of ginger, grated

  • 1 tbsp soy sauce and the zest of 1 lime (combined)

  • 2 tsp fish sauce

  • 1 tbsp honey

  • 1 garlic clove, grated

  • 1 lemongrass, finely chopped

  • 600 grams of chicken thigh, excess fat removed and chopped into large cubes

  • 1 tsp sesame oil

  • 1 tsp sesame seeds

  • A handful of fresh coriander to serve


  1. Add all ingredients except the chicken into a bowl and mix.
  2. Add the chicken to the bowl, cover with glad wrap and marinade for a minimum of 30 minutes or overnight. Soak skewers in water for 20 minutes so they don’t burn.
  3. Thread the chicken onto the skewers (aim for 3 pieces on each)
  4. Preheat your BBQ or frypan to medium high heat and add sesame oil, then apply chicken to the heat and give it a little shake.
  5. Cook for 3-5 minutes continuing to turn until golden brown and repeatedly based with marinade to enhance flavour.

  6. Top with sesame seeds and garnish with fresh coriander.
